@SpaceX launches a reused or even partially reused booster. It'll be big news! -

I think it's water vapour. Water is sprayed towards the rocket to prevent it from overheating during launch. I think.

Common misconception ;) But it's mainly used to suppress the acoustic vibrations from the engines
