@slackhq If I have a number of unread channels, and I tap on one, when I go back to the channel list, most of the others aren’t showing as unread anymore.

This didn’t fix it. I’ve also logged in and out, and deleted/reinstalled already.
Let's see if a quick cache clear helps. Please open Slack and tap You > Preferences > Advanced > Reset cache. Slack will reload but you won't be signed out.
