Yes! Click your avatar in the top-right corner of Slack > Preferences > Accessibility > choose your zoom level to increase the font size. That said, it shouldn't have changed.

I checked with multiple teammates and it changed for them as well today.

Also that accessibility setting makes everything bigger. I just want to make the sidebar with channel names and DM names bigger. For whatever reason it shrunk significantly today.

Are you perhaps referring to the width of the column itself? If so, you should be able to resize it by hovering your mouse over the edge of the sidebar, then clicking and dragging to the desired size.
