Gul'dan and Illidan were good examples of characters who crossed the line between mortality and demonhood. While Illidan DEFINITELY is no longer really a mortal due to how his "deaths" work and just how he looks. Gul'dan is still somehow a mortal despite his appearance.pic.twitter.com/NsPuH3CGr0

The more someone takes demon blood, demon flesh, demon organs, etc. The more they become a demon I'd guess. Hell Gul'dan even had the power to turn people into demons but never did it himself. It's interesting.

I could see that Kil'jaeden somehow prevented him to cross the line, in a manner to keep him in line, I think he only became a full demon after Sargeras empowered him personally in the Nighthold but it was short lived since Illidan just destroyed him and likely consumed him too
