I still don't understand why they did this to him.
I don't know either. Apparently the ponytail look they -tried- to give him looked so bad in the Alpha they just gave him the bald look instead. What I don't understand is why they balded him in the first place and took out his iconic braids.pic.twitter.com/AI1bOWjDzP

I thought it had something to do with Metzen having shaved his head down so it was sort of in homage to him in that way?

It's because Metzen went bald. Pretty sure Thrall even got his kid and all at the same time when Metzen and so on, so on, so on. Metzen was a great nerd and was always awesome to see at blizzcon, but he was never the best writer out there.
