He's relatively sane infact he's still upholding honor above all else. I quested Alliance side he's not the General who enacted Sylvanas' orders he's just the defender of Warfang Hold. Only thing I can I think of is his line with Jaina and swearing he'll fight her if he must.

Well they need to invent more reasons to pretend the Alliance is the aggressive boogeyman because Sylvanas' make no sense whatsoever and are laughable on its face. Too bad what they came up with were also that.
I agree with you there - Rexxar is my favorite character because of a lot of reasons but also because he stepped in to ensure the Horde's future without killing needlessly - he took no pleasure in killing Daelin and even called him a proud warrior.
