I believe the flanking Winston takes more ressources from his dps and DVa, while the defensive one will likely use up support abilities way early into the fight. But I believe the defensive Winston makes ult economy alot easier for his supports, so it's a give and take really.

I feel like the one that engages hard would? If he gets picked fast enough by the other team that would already put it into a 5v6 or forces the team to push for a rez.

It'd largely depend on the opposing composition right? If they have a ton of poke enaging early would save damage but if its a burst heavy composition then sitting back and waiting for an opening would likely be better I imagine?

Those occasions I go support, the hard diving, surprise Winston is much harder on me as that giant ape gets out of healing range and requires me to get into iffy position to heal him. So when I do my normal tanking, I avoid that. Plus my wife is my healer and throws things at me.

Most of the time those teams are playing around their backline. Case study I was thinking of is Janus vs Mano, but applies to Muma/FCTFCTN or across teams like Gesture/Miro too. Broadly speaking most tanks fall into one or the other.
