we have a lot of peaches (I got another peck of peaches from the farm share this past week) so in service of using up peaches, as a side for tonight's dinner I sliced up a peach and tossed it with salt, lime juice, and maple syrup, and fried it in a cast iron skillet.

butter would have been ideal, but my partner can't have dairy, so I used peanut oil (for high smoke point) and margarine (for hopefully similar-to-butter browning characteristics), and just kept them on one side, no turning, but occasionally moving around so they didn't stick.

the peach was nice and ripe to start with, and it got very nicely browned on the down side
