OK friends, suppose you wanted to plan a very nice dinner for Friday, and your weekly farm share box today contained a bunch of chard and an eggplant and some golden beets and various other things, and you're not sure what's in tomorrow's meat share but probably steak.

I have some lettuce and cucumber and bell peppers, so I can make a roasted beet salad. and I could chop up and roast the eggplant, and toss it with sauteed summer squash, and put that on top of a dollop of saag…

I also got another peck of CSA peaches as a nice surprise for her, I bet griddled peach slices would also be good in a salad with roasted beets. I should get some pistachios. and some lemons.

Ooh, hm. The chard makes me think of this, which I've made twice and enjoyed very much: https://www.tasteofhome.com/recipes/chicken-potpie-galette-with-cheddar-thyme-crust/ … ...and which might go well with a beet salad...but that doesn't account for the eggplant or steak. Hm. But at least I shared my favorite galette recipe

Eggplant parm. Slice thin, dredge in buttermilk then cornmeal, fry in 365 oil about 1/2 inch deep. You can do this ahead of time then toast it to warm it up.
