The great thing about cheeses is that to many of them are so incredibly good, or are perfect in specific circumstances. Like hunks of Colby Jack cut with a pocketknife and eaten with summer sausage and yellow mustard on triscuits while camping.

When I lived in CT there was a local goat farm that sold a cheese they called Vesper which was a fresh goat cheese with a line of ash between the morning and evening milkings
