time to fry up some stirs
IMO the key to a good stir fry is to cook most of the ingredients separately, over high heat in the wok, and set each aside when it's nearly done, then combine them all at the end with the sauce and let them simmer on low.

I used to babysit for a Chinese family and whenever the mom invited me to stay for dinner it was an automatic yes because somehow her simple vegetable stir fry was amazing. I asked her how it was so good and could never replicate it, though it did make me learn to love bok choy.
