WHAT. I’m sorry, no, I am very much a latke purist, I cannot and do not approve of kimchi latkes.
I'm not Jewish so I definitely might be wrong, but I didn't _think_ there was anything un-kosher about fermented cabbage? You could always think of it more as a kimchi okonomiyaki.

Yeah I don’t think it’s necessarily unkosher, or even that it sounds like it would taste bad (it doesn’t!) - I’m just one of those people who remains highly skeptical whether latkes made with sweet potatoes still count as latkes.
