The word cookie comes from the Dutch "koekjes", meaning "little cake". The word biscuit comes from Latin "bis" + "coctus", literally "twice-cooked", referring to how these flat, hard breads would be baked twice to be more portable and less perishable.

A little more obvious in "biscotti", too! (like "ricotta", which is made by re-cooking the whey left over from making another cheese)
