Compared to our other tools for battling the virus, can genetic testing scale up the fastest? It is merely a spit test. I’d like a lot more visibility on scalability. Seems like the fastest way to plunge death counts.

No, it's perfectly sensible. Healthcare workers are getting exposed to sicker people, and heavier virus exposure means worse symptoms (other things being equal). So profession is one factor, and genetics would be another factor.

Are there any naturally occurring viruses that target genetics or is this something that could only really be done intentionally? Say like, in a lab for the purposes of targeting specific people groups?

You left out chance: which cells get infected first (nose, throat, lung, eye), time of day of infection..., etc. First genetic studies (UKBB) have turned up nothing significant. If there were a genetic smoking gun they would probably see it.
