No one removes an explosive they are not familiar with. That is for EOD, not boat crews. Well, unless you are familiar with it. An Iranian crew would remove such a device only if they were familiar with it, i.e. it was Iranian. A limpit mine is more dangerous to them then tanker

And all those “sailors” standing too close to it were confident it wouldn’t explode?

If they are familiar with it. Either a safety pin was not removed or a model they use and are familiar with therefore know how to disarm it. That is the only scenario explaining them removing it. For all we know, they might have been the crew that placed it.

Maybe it’s a macho thing. But I would think a deployed limpet mine is intrinsically unsafe.

Not if you are trained and know what you are doing. Get a naval explosives guy on to explain how it is done. Limpet mines are built to be carried by people in a safe manner. Also can be disarmed if you know what you are doing. No reason to suspect Iranian SEALs would not know.

My understanding is that they are detonated by timer or GPS location. Meaning you could not be sure what is wrong with it by looking.

I would assume that those who are experts would know how to. Political damage if the mine was examined by their enemies greater then blowing up in their face. It would be the embarrassment of the decade to have an Iranian Navy limpet mine attached while they deny it.
