Your example is fair. If I were to 1v1 Shaq, the match would be entirely fair (but not equal). He would destroy me, fair and square. We already have fairness; we want to minimize inequality to generate healthy competition. Exclusion using age/sex/weight class/etc. is helpful here

Exactly, you create a FAIRER PLAYING FIELD on the aggregate level by eliminating group variables. The fact that this does not eliminate all variables on the individual level is not a valid argument for re-introducing those variables, especially if it's only for a select group.

No. It would be a violation of WNBA rules. If the rules changed such that men could enter the WNBA, it would be fair. However, physical inequality between men and women is so great that there wouldn't be any room for female basketball players anymore. Thus we drew the line at sex

Yes, and it would be considerably less 'fair' if Stephen Curry were playing in the WNBA. Allowing trans women to compete in female leagues has the potential of dramatically INCREASING unfairness and is an unfair application of the rules.
