If in the end it's still impossible to judge who is right, then are we left with the precautionary principle (try to avoid theoretically catastrophic human intervention, ie CO2, in the environment)?

No. The threat of CO2 could be nonexistent. To give it credence and react to it is the same as saying it is proven. You could be doing a great deal of harm based upon zero proof.
