why are game developers obsessed with dumbing everything down for a broader audience even though all it does is make the game less fun

Stop trying to create drama
Not drama if it's actually true. Ultimate is dumbed down significantly compared to its predecessors (64/Melee). Just like SFV is. Just making common observations. Big companies are very pandering when it comes to its casual audience.
