What is this RPC server ? its not the blockchain but the server that serum applications orderbooks/swapps/dapps on solana run through ?🤨

The servers that you can query to get / send info from / to the solana blockchain. Like infura for ethereum. If they're under heavy load, you will have issues interacting with solana.
