Some tips: 1) for meat-replacements, beyond and impossible are the best; gardein is good too 2) try out veg restaurants if there are any in your area 3) middle-eastern (falafel/hummus), east asian (vegetables/noodles/sauce) generally good 4) roasted vegetables

I'd add coconut-milk based sauces/curry combined with spices for taste. That goes well with legumes and compensate their dryness. Getting more familiar with avocado also helped me. For the roasted veggies, pumpkin and sweet potatoes : So good and easy. Supplements are useful too.
