A few thoughts:
1) some is DeFi, not AMM specific. On Serum you can launch your own market! serum-academy.com/en/add-market/
2) totally agree with the last point: and this means you need to think of what market scales best.
3) AMMs as liquidity for illiquid assets can make sense
