To be clear, Uniswap governance is a single company, and Sushiswap governance is a vote of all token holders, implemented by a multisig address with 9 different entities as gaurdians.
....seems hard to call Uniswap the less centralized of those?
Uniswap v1 and v2 have no governance, they're fully autonomous, except main frontend.

“Centralization” is a red herring — governance of DeFi building blocks like Uniswap is bad, not good.
Good—trust-minimized (as Uniswap is today, IMO)
Ok—decentralized gov w limitations
Bad—decentralized gov w no limitations (as Sushi is today)
V Bad—centralized gov w no limits

Uniswap does not have centralized governance, the contracts have no admin, unlike Sushi with its multisig and governance token controlled by mostly friends of the show with a few independent actors sprinkled in for the appearance of legitimacy like Larry and Richard.
