How will it remain 'completely trestles' if they are maintaining a centralised order book, surely that requires custody of funds?

Ah sorry -- 'centralized' doesn't mean that it's custodial, it just means that there's a matching engine.
It's totally non-custodial. There's just a smart contract (program, in Solana) that programatically matches orders if they cross.
