I think the problem is largely that the 2k lb cow itself also requires a buncha wheat to feed--I think more wheat than it provides food. (Something something conservation of energy something.)

Calorie for calorie it's less efficient but obviously if you're prioritizing the particular nutrients that meat has then it's a different story.
