The answer that I had:
CoinMarketCap starts, basically, by pricing BTC/USD. Then it prices everything off of that--USDT mostly off of BTC/USDT and others off of [x]/[BTC:USDT].
The largest volume "fiat" markest are Coinsbit BTC/USD and P2PB2B BTC/USD according to CMC.
