The biggest tradeoff between USDT and USDC tends to be primary market vs secondary market liquidity. USDT has great exchange liquidity but mediocre creation/redemption liquidity; USDC is the opposite. So easier to trade in/out of USDT but easier to turn USDC into $1.

I think it's not totally binary--generally USDT is basically redeemable but it takes longer and is more expensive and more difficult than USDC.
