Tex Mex is Mexican food just like Oaxaca food and San Luis Potosi food are Mexican food. It evolved due to political, regional, and resource realities. Critics of Tex Mex partly are ashamed of the circumstances that created it, so whatever. We endured, shall endure. #TexMex

Yet, Oaxacans would never call their food Mexican food. In many parts of Oaxaca, people don’t eat tlayudas, and other foods we consider to be the most Oaxacan. Tex Mex has little in common with Oax, and that’s okay. We need to stop comparing other Mexican food to Tex Mex.
