I feel that, but what is the issue people have with the name? #LATaco? Seems quite neutral, inviting, and open-ended to me ... am I missing something? Gracias.

I think the issue is that the taco is puro Tejano, not LA, especially since the capital of Aztlan was likely present-day Houston. (Ducks...runs) Just kidding... although @GustavoArellano would agree (duck...runs again)
