I'm sure you're just wanting to learn stuff, but in case you're more interested in just making NES games, have you heard of NES maker?
I have, and I considered it, and I might use it if I want to prototype quickly in the future, but I decided that it is lacking in some features I consider pretty essential to many of the great NES games (like no vertical scrolling that I could find)

Totally understand! I believe the project is still developing so maybe in the future it'll have all the tools needed to make better games. Looking forward to seeing what you put out in the future =)
