Arguably not, esp. if it's recursive. Recursive resolving leaks info about you to the auth servers in ways stub/proxy resolving doesn't.

Using shared caching nameservers gives you anonymity from the auth servers.

The auth servers are the least of my problems. I'd rather let ns1.domain.tld know I'm looking for a record of theirs than let 1.1.1.1/9.9.9.9/8.8.8.8 know EVERYTHING I'm looking for.

If you're behind carrier-grade NAT (as all mobile users are), using 1.1.1.1 or 8.8.8.8 reveals nothing about you.

Most users across the world are behind some kind of CGN. Some ISPs do this for IPv6 too, even though it's unnecessary.

For anyone behind CGN, the privacy threat is your ISP not Google or Cloudflare. They can inspect & log any DNS packets.
