If you're behind carrier-grade NAT (as all mobile users are), using 1.1.1.1 or 8.8.8.8 reveals nothing about you.

Most users across the world are behind some kind of CGN. Some ISPs do this for IPv6 too, even though it's unnecessary.

For anyone behind CGN, the privacy threat is your ISP not Google or Cloudflare. They can inspect & log any DNS packets.
