If you right click on the tabbar it is still there for me. Also Ctrl-shift-T as others have mentioned
Firefox 57 buried "undo close tab" behind 3 or 4 levels of menus. Is there any shortcut for it?

Ah. I always just used the one at the top of the inline recent-history in the menu bar, which was nice because you could see it's exactly the tab you wanted (not another one you forgot you closed too).

So it's really the "recent history" I'm upset about getting buried (and replaced by the "recent highlights" that make no sense and fail to follow principle of least surprise).

Huh, I guess there will eventually be an extension to restore the old behavior, as always ;)
