Yay, UBO can fix the new Gmail to be usable, at least in advanced user mode with per-site settings. Pull down the UBO panel and click the A icon ("block remote sites") and that illegible Roboto is gone!
Probably no such luck if you have it installed locally though. Browsers should have a feature (critical to stop fingerprinting) to prevent sites from seeing any local host fonts except serif, sans serif, and mono.

Safari does this. It only lists the system default fonts now.
