So, I heard a guy on a podcast say we could get more ethical products by using blockchain to record sourcing. I don't understand how this is physically possible. How does a public ledger stop people from just lying? Am I missing something?

I don't see how blockchain contributes (spoiler: it doesn't), but demanding a consistent ledger of some sort works by driving the cost of making a consistent fake over the profit margin of faking it. This is essentially how National Organic Program semi-works.
