I´m not experience related to create an artbook. But Indesign could be a good choice? I used it sometimes for smaller multipage documents. It´s accurate and quite handy.

for a book a made a few years ago i used Blurb. I found it relatively affordable when I made mine and it came within a few weeks too

Sounds like a job for a dedicated layout program, such as adobe InDesign or affinity publisher.

Adobe InDesign is perfect! But I also using simple software to doing simple things (of course art books are not simple). for example, to making Catalogs, I using "Figma". That's a light wight app to making mock up and UX. But the result can be attractive. :)pic.twitter.com/IDVohFlnA2
