It's not really an option. An owner risks their investment, spends time running the business. Why continue without proper rewards?

Again, no they wouldn't. Already disproved that. So, a new deli/bakery opens up, of other businesses do more business.
So businesses that bring in more business will have to hire more people to handle the business. Or a new startup would, also.
