This is so weird to me because now your not beholden to the rule that something is required to be evil. It allows for more creativity not less.
Many DMs already avoided said rule. Some even in the comments there are talking about nice Beholders that manages libraries, Mindflayers on a quest to understand why his species is prejudiced and suches.

i... are beholders technically evil? i always assumed (and dm'd them) as rly paranoid demigods. like, they're not doing all this crazy shit cause they inherently are evil, but rather because this one beholder is absolutely convinced he will be killed if he doesnt destroy x thing.
that's how me and everyone else i know has always thought of them, but WoTC have outright said that Beholders go out of their way to enslave and control other creatures, carving out their own sizable evil empire
