You can ask, better restaurants are using butter and olive oil. Low quality restaurants = I'd rather eat at home. I just made hummus in a blender and this shit slaps.

Olive oil is like 10 or 20 percent linoleic acid and 60 percent oleic
The seed ppl may not want any linoleic and may even distrust oleic
