cook it until the skin is crispy, yes. it's very good
some japanese restaurants will have like salmon skin sushi and you can try that out as a preview

How do you make the skin crispy without overcooking the salmon though? For me its usually still soft and peels right off if I do it right.

Cut the salmon into smaller slices and cook it for a short period. You can rub a little oil on the skin to crisp it.
