okay random question: when you order salmon at a western restaurant it's always served skinless. why? properly cooked salmon skin is so delicious

i'm thinking of like slightly nice diners? not actually sure how to describe the class of restaurants i'm referring to. they'll have a salmon dish that's like $15-25 and it'll be served with maybe potatoes of some sort and no skin that i can remember

For sure that dish exists, I'm just disputing "always," I think both skinless and skin-on preps are common.

yeah so no, getting the skin _just right_ is a bit much for a line cook at even a nice diner - you have to go higher end sry 😕
