it's really gonna depend on your background but colin adams' "the knot book" is pretty neat: the whole thing is visual and there's a bunch of surprisingly hard stuff relevant to current research but the basic ideas are explainable with v little background

you may also enjoy jeffrey weeks' "the shape of space" which is an introduction to topology motivated by the question "what shape is the universe"
i have a bunch of other recs like this in a page on my blog although some of them require a lot more background than others
