part of the story i remember hearing is that this might be a contributor to the obesity epidemic too - if all food is less nutritious you have to eat too many calories to get enough micronutrients π¬π¬π¬

i ate 4 pieces of salmon sashimi as part of dinner tonight and i legitimately feel a little body high right now which is fucking crazy. google says salmon is high in "vitamins B3, B5, B6, B12, vitamin D, vitamin E and selenium." hmm

I have never actually met someone with a gluten sensitivity before in real life.
It's fascinating how portions of a species can readily adapt to a relatively recent dietary addition, while others suffer for it.
Parallel development is funny like that.

In all likelihood, unless you live in an area that's extremely ethnically homogenous, you *have* met people with gluten sensitivities, likely in a local culture that treats their persistent health problems as mysterious and unfixable.

Its a lot of gluten, there's a lot of gluten in thickened sauces such as soy and teriyaki. For people with celiac, anything above 20ppm is distinctly noticable, not sure about gluten sensitivities.
