People who try mindful eating usually report that food is more enjoyable. However, if the reinforcement gradient were this simple we'd expect everyone to already be doing it from the time they are children. What's going on?

much of the time for me the experience of eating becomes overwhelmingly disgusting
In fact if you are a regular person being mindful about it does not make it more enjoyable; it makes it less enjoyable, because objectively it wasn't as good as you thought.
