Have you read "Rest In Motion"?
Rest is taking anything at its natural, comfortable pace. It's mostly opposite to rushing, but dawdling isn't restful either.

So for me specifically: games/TV/books but not for too long, journalling, gardening, cooking, sometimes cleaning, hands-on arts and crafts, singing, dancing...
Because of my job I find it hard to find things that are intellectually strenuous restful, I think.

how can you tell that those things are restful / relaxing? like what’s happening in your body as you do them?

It's more the lack of accumulation of stress from going at the wrong pace that's relaxing in itself?
I guess relaxation is just the absense of stress, in all sorts of ways
