The NYC site uses scrapers, CA site says it doesn't need volunteers right now.

If you mean outside of any structured system, just calling places to try and find an option, I think posting your willingness to do so on e.g. relevant local subreddits would probably get lots of takers.

My city has mutual aid fb groups, buynothing groups, etc that would be great for this. Might be worth seeing if yours has the equivalent of that too!

yeah my understanding is VaccinateCA is aiming to be a central repository for info about vaccine availability which is great
but still may not necessarily help e.g. a 70yo who doesn’t have tech-savvy younger relatives to use it on their behalf
