If I'm reading the article correctly, "intermediate" is not actually a thing. There are only two kinds. But a significant number of humans seem to be choosing it nonetheless. (Starfish, of course, have no earwax at all.)

probably because most people are only familiar with their own earwax

Also because "wet" earwax isn't really *very* wet; that's just the name of one of the two main types.
