I'm not clear on what it would mean for the principle of maximum entropy to have a truth value.

Like I can see what it would mean for it to be a good idea or a bad idea, but it's more of a model selection heuristic than a statement of fact.

This is a bold claim with profound implications I disagree with. I loosely associate this principle with Godel's Incomp Theorem. Once you grant belief to statements of less-than-max entropy you believe to be true, you start to let in falsehoods too
