I recommend looking for labs where you learn _methodologies_ that address questions at the level of analysis you're interested in.         Yes! Unfortunately, the same may not hold true for postdocs... because, while switching topics may be easy in theory, certain fields are jealously guarded by more established PIs

        But be careful to not think of what you learn in your PhD as your method. You should be continuously trying/learning new techniques throughout your career to get at the question at hand.
