Reality is what the brain generates to explain the regularities in our sensory data. If the sensor captures the relevant optical regularities and translates them to the parameter range our neurons can process, our brain will usually find them, I guess.

Do you mean that if I were to view that reconstruction on a 2d screen, my pattern recognition will kick in and obscure the flaws again, too? I see that happening, but the double-loss (from light impulses to neural signals to light impulses and back) should be noticeable?

or maybe my original question was unclear because of the second tweet - I just meant to ask: is there a video of "some normal scene as encoded by the human eye" somewhere? (Not just some attempt at blurring the peripheral field but the glitchy, jittery mess you describe)
