9yo hates the math workbook I got her b/c it's mostly arithmetic drills and word problems ("math is so boring!") Is there any "higher math" book ("math is cool!") that's age appropriate? Please don't tell me I have to write my own.

Many kids (especially girls) are too smart to fall for the appeal of solving puzzles for their own sake. For them, the puzzle has to be instrumental to achieving something they actually care about. Give them projects that require arithmetic (allocation), trig (building) or logic.

Math as a field (not as an area of skills) is an art form and probably should be taught as such. As a child, I would have loved the "Quadrivium", and Jeffrey Weeks: The Shape of Space. Number theory is best understood by learning to code basic arithmetic and then matrix algebra.
